ROASTED CAULIFLOWER WITH WHIPPED GOAT CHEESE

Yields: 6-8 Servings

Serve this tasty roasted cauliflower dish as an appetizer or even as a side dish to accompany beef, pork or poultry.

Ingredients for Roasted Cauliflower:
1 head cauliflower, leaves removed
2½ cups dry white wine
⅓ cup olive oil
¼ cup kosher salt
3 tbsps fresh lemon juice
3 tbsps unsalted butter
1 tbsp red pepper flakes
1 tbsp granulated sugar
1 tbsp granulated garlic
3 sprigs lemon thyme
1 bay leaf
8 cups water

Ingredients for Whipped Goat Cheese:
4 ounces fresh goat cheese
3 ounces cream cheese
3 ounces feta cheese
⅓ cup heavy whipping cream
2 tbsps olive oil, divided
olive oil to drizzle
salt to taste

Method:
Preheat oven to 475°F. In a large sauce pot, bring all ingredients for roasting cauliflower except cauliflower to a boil over medium-high heat. Add cauliflower, reduce heat and cook 15-20 minutes or until a knife easily inserts into center, turning occasionally. Using a mesh spider or slotted spoon, remove cauliflower and allow to drain well. Transfer cauliflower to a rimmed baking sheet. Roast in oven 30-40 minutes or until brown all over, rotating baking sheet half way through cooking process. While cauliflower is roasting, prepare whipped goat cheese. In the bowl of a food processor, blend together goat cheese, cream cheese, feta, heavy whipping cream and 1½ tablespoons olive oil. Season to taste using salt. Transfer whipped goat cheese to a small serving bowl and drizzle with remaining ½ tablespoon olive oil. Remove cauliflower from oven and transfer to a serving platter. Drizzle with olive oil then season to taste with salt. Serve as an appetizer or side dish with whipped goat cheese.
